(ALMOST INSTANT) MISO SOUP

Miso is made from fermented soy beans and barley or rice.

You will need:
1/4 cup of scallions
1/3 cup miso
1/2 pound of tofu, cut into 1/2 inch cubes
1/4 cup of peeled and minced carrots.

Bring 6 cups of water to a boil in a medium sized pot. Turn down heat to low, and mix 1/2 cup water with miso in a blender or bowl. Whisk or blend until smooth.

Pour miso mixture into hot water and add tofu and carrots. Stir once or twice and let sit for a minute. Be sure the water is still hot. Add scallions and serve Scallions are spicy, though not as much as their cousin, onions. If they are too hot for you, add them with the hot water, tofu and carrots, stir together and let them sit together for the minute indicated. 

The whole shebang takes only 15 minutes

This is a very healthful soup. You may even enjoy it.
